A Whole Year???

Happy anniversary! Today marks the one year anniversary of this blog! Woohoo! In the first year this blog has gotten over 6,400 views, I've shared almost 90 posts, most of them recipes, and I have cooked more than I ever thought I would.

I must say, I'm proud that as the year has gone on I've created more and more of my own recipes, whereas at the beginning I was mostly trying out recipes already on the internet. I'm also glad I kept up with Caroline's Kitchen, as it motivated me to continue making exciting food during my first year away from home.

Another update: Starting this blog has opened up some very cool opportunities for me outside of the ballet world. For instance, I'm an intern/ bloggerina with Barre, an all natural, vegan energy bar company started by a company dancer at my ballet school. I also contribute to my home studio's blog, as well as writing contributing posts on 4Dancers.org as a part of the Barre team. I've shared links to most of the sites I contribute to already, but if you haven't seen them, here they are:

Another exciting bit of news- As of August 1st, I have officially gone vegan! What does this mean for the blog? You can expect lots more exciting recipes, just without cheese, milk, eggs, or any other animal products. Don't worry, I won't delete any of my past non-vegan creations, there just won't be any new ones. I'm also planning to do some posts on vegan nutrition and tips for if you're planning on making the change. It's not difficult as long as you're willing to invest a little time and effort into making sure you're well-informed and well-supplied.

Thanks again to all of my fellow foodies who have checked out this blog and to all of you who will read it in the future! I appreciate the good feedback I've gotten and don't plan on stopping any time soon.

Keep Cooking!

Let me know if you have any celebratory ideas!

By the way, I recently started an Instagram account for my blog, @Carolinesvegetariankitchen. Follow me for daily pics of what I eat and make in my kitchen! There are often pics of the recipes that don't make it to this blog, so you're missing out if you're not following already. ;)

4000 thanks to all of you foodies out there! Here's to another 4000 views!

Hearty Vegetable Soup

It's a snow day today! That means I can post some of the stuff I've been accumulating!

I haven't made soup from scratch in a very long time. On Sunday, I decided it was time to change that. The result was a hearty (and easy!) soup packed with colorful veggies in a flavorful broth!

Note: This makes a LOT of soup. I won't have to cook at all this week, as a result. I also thought the soup tasted even better after sitting in the fridge overnight, since the flavors had time to come together; so don't be afraid of leftovers!

Hearty Vegetable Soup
By Caroline Mac

Ingredients:
4 c low sodium vegetable broth
1 can low sodium kidney beans, rinsed and drained
1 white onion, chopped
1 clove garlic, minced
3 carrots, peeled and chopped
4 celery stalks, thinly sliced
10 asparagus spears, chopped
1.5 c broccoli florets, broken into smaller pieces
1 c sliced white mushrooms
1  14-oz can diced, no salt added tomatoes in juice
1/2 c chopped fresh basil
2 T extra virgin olive oil
2 t chili powder
1t ground cumin
1 1/4 t salt
1/4 t ground black pepper
1/2 t Penzey's Trinidad Lemon Garlic marinade

Step 1: Heat oil in a large pot over medium-high heat. Add all vegetables and garlic and saute until they begin to tenderize and onions turn translucent. This may take a little while, due to the large amount of veggies.

Step 2: Add chili powder, cumin and basil and stir for another 2-3 minutes.

Step 3: Add vegetable broth, tomatoes, and black pepper. Bring to a boil. Add salt and Trinidad marinade. Cover, reduce heat, and let simmer for 10-15 minutes.

Step 4: Serve warm! Refrigerate remaining soup for delicious leftovers.

Enjoy!

The Barre Blog

As many of you may know by now, I've recently become an intern at Barre: A Real Food Barre. However, this is the first time I've mentioned it on this blog! I definitely should have shared it a long time ago. I'll do a more detailed post on Barres later, but I thought I'd share the Blog, Facebook, and Pinterest so you all can check it out!

My most recent post is on the benefits of eating dates. Since I've used them in a few of my recipes I figured it would be worth sharing here. So, This is why you should eat them!

The Blog: http://realfoodbarre.com/blog/

Please, please, please check out the other social networking pages as well! This is a great small business that deserves a TON of attention. Better yet, buy some Barres! You won't be sorry. :)
