Pumpkin Coconut Soup with a Kick of Cayenne

For the longest time I've had this idea that soup is really complicated and a hassle to make... where in the world did I get that idea???? Since pumpkin season is upon us, I decided I would jump in and create a new soup from scratch, with absolutely no recipe to follow. The result? A delicious, extremely healthy, low calorie, and satisfying soup that is sure to warm you up on cold fall evenings.





Pumpkin Coconut Soup With a Cayenne Kick

Makes 7, 1.5 cup servings

Ingredients:

1 can pure pumpkin
1 can light coconut milk
1 can no-salt-added diced fire roasted tomatoes
3 c low sodium vegetable broth
11.5 oz Nigari silken tofu
3 sage leaves, whole
2 c frozen veggie medley (mine was peas, carrots, green beans, corn and carrot), thawed
1 c english peas
3 c kale, cleaned and chopped
1 c diced onions, garlic, and shallots (from Trader Joe's)
1 T coconut oil
1-1.5 t cayenne 
2 t salt
1/2 t black pepper


Step 1: In a large pot, combine pumpkin, sage, coconut, and broth. Heat until mixture starts to bubble, and remove from heat. In a blender, puree tofu and pumpkin mixture (as much as will fit in the blender, including sage) until smooth. Return to large pot and add the canned tomatoes. Stir until thoroughly mixed and set aside.



Step 2: In a separate pan, heat coconut oil over medium-high heat. Add chopped onion, garlic and shallots, and peas to the pan and saute until fragrant and onions begin to become translucent. Add kale and saute for approximately two more minutes. Finally, add frozen veggie mixture and saute for 1 more minute, or until heated through. 




Step 3: Add vegetables to the liquid mixture. Add cayenne, salt, and black pepper. Stir, cover, and raise heat to high. Cover, bring soup to a boil, and reduce heat to low. Let simmer for ten more minutes. 

Serve warm.

Southwestern Zucchini Pasta Salad with Tomato-Cilantro-Avocado Sauce

I created this recipe when I needed a reason to try a new local pasta brand, and eventually turned it into a vegan salad with raw zucchini noodles! I also added the avocado the second time around and loved the creaminess it gave the sauce. It's a light, spicy salad that satisfies and refreshes on a hot summer day. I've posted the zucchini version, but know that you can use a box of your favorite pasta if you're so inclined.


SW Pasta Salad with Tomato- Cilantro- Avocado Sauce

Serves 3-5 

Ingredients:
4 zucchini, sliced into thin strips (I used a vegetable peeler)
1 cucumber, peeled and diced
1 c carrot, shredded
1 container (3 cups) Pomi diced tomatoes, split in half
1 c fresh cilantro, plus 1/4 c to be added later
1 15 oz can low-sodium black beans, rinsed and drained
1/2 avocado, plus more for garnish
Juice of 1 lime
2 cloves garlic
1 t SW style seasoning
1 t smoked paprika
1/2 t cayenne pepper
3 pinches salt
Cholula hot sauce, to taste





Step 1: Combine 1.5 c tomatoes, 1 cup cilantro, avocado, lime juice, garlic, and all seasoning in a blender or food processor and puree until smooth. Set aside.










Step 2: Combine Zucchini noodles, cucumber, carrot, 1.5 c tomatoes, 1/4 c cilantro and beans in  a large bowl. Stir gently until thoroughly mixed, careful not to break the zucchini noodles.










Step 3: Pour sauce evenly over the vegetables and stir gently until all ingredients are thoroughly coated.  Serve cold or at room temperature with a few slices of avocado for garnish.

Crispy (And Spicy!) Baked Tofu

Here's yet another delicious way to prepare tofu! My goal for this one was to duplicate the spicy tofu I  buy at Food Front Co-op in Portland. My absolute favorite tofu, I've never been able to find this tasty, charred, and spicy version anywhere else. I'll be the first one to say that my tofu isn't the same as the goal, but I did achieve a spicy and flavorful version with a crispy skin. This tofu is great on it's own as well as chopped up in a salad or stir fry.

Crispy and Spicy Baked Tofu

Ingredients:
1 16 oz package extra firm tofu (I like Trader Joe's high protein tofu)
Sauce:
2 T sesame oil
1t rice vinegar
1/4 t soy sauce
1/2 t sweet chili sauce
1/2 t red chili pepper
1/4 t garlic powder

Step 1: Rinse block of tofu and press it in a tofu press or under weight for 30 minutes. Remove and cut into slices no more than 1/2 inch thick. Set aside.


Step 2: Whisk together all sauce ingredients until thoroughly blended. Brush sauce onto both sides of each slice of tofu. Place slices in a dish and refrigerate for two or more hours.









Step 3: Preheat oven to 350 degrees F. Place tofu slices on a non-stick cookie sheet and brush any remaining sauce over slices.

Step 4: Bake tofu for one hour, flipping the tofu every 20 minutes (a total of three times). Tofu should be brown/ golden and crispy on all sides. Remove from oven and serve!

Southwestern Black Bean Hummus

Here's a southwestern twist on a mediterranean classic! I had some spread on a rice cake topped with sun dried tomatoes. You could also serve it with veggies, crackers, or even in a mexican-inspired wrap!

Southwestern Black Bean Hummus

Ingredients:
1 can black beans, drained, no salt added
1/4 c tahini
3 T fire roasted green chilis
2T Southwest style seasoning
11/4 t cumin
2 pinches salt
1t lime juice
6-10 drops Cholula hot sauce

Puree all ingredients in a food processor until creamy!

Sesame Ginger Green Machine Stir Fry

I didn't realize this stir fry was rather monochromatic until all the veggies were in the pan! Well, if green veggies are good for you, then this recipe takes the cake!

This recipe makes 2-3 smaller servings.

Green Machine Veggie Stir Fry

Ingredients:
1 c green beans, cut into pieces
1 1/2 c broccoli florets
1/2 cup edamame
1/2 c sugar snap peas
1-2 small heads bok choy, cut into large pieces
1 recipe of spicy sesame ginger sauce
1 square of baked tofu, cut into small pieces
Canola oil for cooking






Step 1: Add small amount of canola oil to a pan and stir fry/ saute all veggies over medium-high heat until tender. I prefer my veggies a little bit crunchy, but you can go as long as you want until you reach your desired texture.











Step 2: Reduce heat and add tofu and sauce. Stir until ingredients are thoroughly coated and tofu is heated through. Serve hot.

Note: Though I didn't include it in the recipe, you can serve the stir fry over noodles, rice, or another choice of grain.

Spicy Sesame Ginger Sauce

In honor of surpassing 2,000 blog views and nearly 50 recipes, I'll be posting a few BRAND NEW recipes this week! That's right, recipes that I have made up myself. I'm sure there will be plenty of improvements to be made in the future, but if they taste good on the first try I'll share them!

My first of the series is a spicy sesame ginger sauce that can be used in a stir fry or as a dipping sauce. I'd like to figure out how to make the sauce thicker without affecting the flavor, so I'll be doing some research and adding an update in the next couple of weeks. This recipe coated a stir fry worth 2-3 servings, so you may want to double it if your want more saturation or are using a larger recipe. If you do, remember the cardinal rule of doubling... Don't double the spices unless you want to end up with something so spicy you can barely eat it! I speak from experience.

Spicy Sesame Ginger Sauce

Ingredients:
2 T water
2 1/2 t sesame oil
2t rice vinegar
1 t soy sauce
1T plus 1/4t minced ginger
1 garlic clove, minced
1/4 t red chili pepper
1/4 t agave syrup
2t sesame seeds

Whisk together all ingredients until thoroughly blended. Add to stir fry or use as dipping sauce.

A Tasty Halloween!




It's that time of year! Lately, I've been doing so much with pumpkins. In fact, I think pretty much everything I've made in the last couple weeks has involved pumpkin in some way. I've decided to combine all these recipes into one big post. I hope you like pumpkin!

Perfect Pumpkin Spelt Bread
Adapted from A Grain a Day

Ingredients:
3 c spelt flour
2 t baking soda
1 t baking powder
1 t salt
2 t ground cinnamon
3 t pumpkin pie spice
3 T arrowroot powder
1 T flax seeds
2/3 c agave syrup
2 c pumpkin puree
1/4 c canola oil
1/3 c apple sauce
Pumpkin seeds for garnish

Step 1: Preheat oven to 375 degrees. Mix dry ingredients and wet ingredients separately. Combine wet and dry ingredients and stir until smooth and uniform.

Step: Spread mixture into greased bread pan. Bake for around 45 minutes, or until a toothpick comes out clean when poked in the center of the bread. Let cool.


Pumpkin Spice Granola
Adapted from Skinny Taste
Ingredients:
1/4 cup uncooked quinoa, rinsed and pat dried
1 1/2 cups rolled oats
1/4 cup flax seeds
1/4 cup pumpkin seeds
1/4 cup sliced almonds
1/2 cup dried cranberries
1/4 cup agave syrup
1/4 cup pumpkin puree
1 t coconut oil
1 t pumpkin pie spice
1/4 t cinnamon
pinch of salt
1/2 t vanilla extract

Step 1: Preheat oven to 300 degrees. Combine all wet ingredients and spices and mix until smooth and thoroughly combined.

Step 2: In a separate bowl, combine quinoa, oats, flax, seeds, almonds, and cranberries. Pour wet mixture over dry and stir until everything is thoroughly coated.

Step 3: Spread mixture on a cookie sheet covered in parchment paper. Bake in oven for 20 minutes, or until golden. Remove and let cool before storing in an airtight container.

Sweet and Spicy Pumpkin Seeds
Adapted From The Hazel Bloom
Ingredients:
Around 2 c pumpkin seeds (Mine came from the pumpkins I carved!
3 T Canola oil
1T powder stevia extract
1 1/2 t salt
1 T rosemary
1/4 t cinnamon
1/4 t cayenne pepper
1/4 t black pepper

Step 1: Preheat oven to 350 degrees. Combine all seasoning and oil and mix until thoroughly blended. Add pumpkin seeds and stir until seeds are evenly coated.

Step 2: Spread seeds on a baking sheet. Bake for 15 minutes, stirring every 5 minutes. Let cool.

I even had a pumpkin dish at my favorite Italian restaurant! I must say, Pumpkin ravioli in a sage cream sauce may just be one of the best things I've ever tasted...

Southwestern Tofu Scramble

Until just a couple weeks ago, I had never eaten a tofu scramble! Crazy right? A vegetarian that has never had this dish... Well, it turns out that I love it. My initiation into tofu-scramble-dom occurred at Whole Foods. They had a Cajun tofu scramble with Cajun sweet potatoes.

It turns out that making a tofu scramble is incredibly easy. I think they're generally made for breakfast, but I did it for dinner. My dad got me a gift of gourmet spices at a cooking shop near my studio, including Southwestern seasoning, a Singapore seasoning, and an Balti seasoning. I've made it my goal to make something each night with these spices as the inspiration. Tonight was Southwestern night. I found a basic recipe online and decided on my own spices and serving suggestion.

Southwestern Tofu Scramble
Inspired by Vegetarian Times
Ingredients:
1 red bell pepper, diced
4 green onions, chopped
1/2 cup chopped carrots
1 clove garlic, minced
2t Southwestern seasoning
1 16-oz package extra firm tofu, rinsed, drained, and crumbled
1-2t Mexican hot sauce
2T cilantro, chopped
Salsa verde, for garnish
1/2 avocado, garnish
Olive oil for saute

Step 1: In a large sillet, saute pepper and carrots in olive oil over medium-high heat until tender. Add Onions, garlic, and seasoning and cook for a couple more minutes.

Step 2: Add Tofu and hot sauce, stir until evenly mixed and cook until heated through.

Step 3: Stir in cilantro.

Step 4: Serve topped with salsa and avocado. You can also add more hot sauce if you prefer a spicier dish.
